Gorgonzola Stuffed Mushrooms

This has become my new favorite appetizer. Delicious, actually quite healthy and so easy! It's an amazing balance of sweet and salty, with a decadent savory aroma. There are only four ingredients and it can be whipped up in less than 15 minutes (start to finish). With only 10 minutes in an oven, it's suitable for making at home as well as aboard ship (come on...anyone can use the oven for just 10 minutes!). Enjoy, my friends!

Gorgonzola Stuffed Mushrooms
(serves 2; can also be multiplied to feed a crowd)

10-12 button size portobello mushrooms
1/3 cup gorgonzola cheese, crumbled, at room temp so it's soft
4 TB honey
Drizzle of olive oil

Gently clean mushrooms, pat to dry, and remove stems. Place mushrooms, top side down, in a shallow baking pan lined with aluminum foil (let's keep clean-up a breeze). Using your finger, or if your honey jar has a dispenser, place a small amount of honey inside each mushroom cap. On top of the honey, pile a small amount of crumbled gorgonzola cheese. Drizzle the mushrooms with olive oil. Place in a 400 degree oven for 10 minutes or until the cheese is melted and everything is sizzling nicely. Allow to cool slightly and enjoy with a chilly Hendrick's gin martini.
